Grabdisplay captures to memory (DMA, PCI->RAM). Overlay goes directly to
the video card (PCI->PCI).

True.

I'm working on achieving this with GStreamer. We can do it with sound
already, I want to do the same using video (video->screen isn't hard,
but video->disk is being worked on right now).

Yes, that's a PCI problem. Didn't look at it yet in detail.
