I've been playing with MythTV; it can do real-time encoding to MPEG4 and
simultaneously view something -- the only issue is that I'm not sure if
you can view what you are recording or if you can only view something
else.  If you're not familiar with it, MythTV does some tivo-like
functions; in particular, you can "pause live tv" and it provides an
electronic program guide (which is populated with data from XMLTV), and
of course you can schedule recordings as well.  As long as your CPU and
Disk can keep up, you can play one thing and record another at the same
time.  Also, it has support for multiple tuner cards and can do
picture-in-picture as well.
