I have tried ffmpeg in the past and am trying it again.  Do you have
any settings that you are satisified with that you would care to
share?  It would just save me all of the "trial and error" to get
something that looks nice.

Also it might help me rule out that it's not the software but the
hardware I am using that is making it look jumpy if your settings work
fine for you but not so fine for me.
