Try upgrade to the latest version of the bttv driver.
http://bytesex.org/bttv/

Also, check your /etc/modules.conf to see if the correct card type is
selected. i.e.,
	options bttv card=??

The bttv driver definitely can capture colour with my AverTV Stereo. :)
