yea yea. one word (err, maybe two) Mjpeg-tools.

grab the latest and greatest from here:
http://sourceforge.net/projects/mjpeg/

and sign up on the mailing list to keep up-to-date on it's developement.

ummm.. i see ron already replied several times.

i think mjpeg does all this, even without a monitor and video card.
think you could use just a simple capture card (with an additional
soundcard if needed).  almost all the mjpegtools are cli and appears to
be well coded.

there's already a frontend for this tool but it would just need the
timers written (sort of like an xcron to set the cron jobs up). yup, i
think it pretty much has all the work done, you just need an gui for the
timer bit.

i've thought of also just using my old computer as a tivo box as well.
basically the same thing, just kinda bigger.
