We do already store the data in computer readable format as well (in an
SQL database), but the specification calls for the camera name and
timestamp to be recorded in human readable form on the images themselves
before they're securely archived, in case they ever need to be used in a
court case (as they're recording from security cameras).

They're streamed over a network to an archiving server (which is accessed
via a web browser), and a number of guard's terminals which display
realtime capture from many cameras at once in thumbnail or large format
via a custom GNOME application. This is already up and running and working
fine, so we don't want to change it just because we're using different
video capture machines in the back end.
