I'm doing real time processing. Usually in the rgb domain (or grayscale
domain).

Try that.

The issue is what will be the final format, RGB or YUV? If you
save as jpg or mpeg, use yuv, because it would be converted to
it anyway. If you use png, gif, use rgb.
