That would be fine, but various things get broken
and only get fixed in CVS or tarball releases.
Some provide ways to build the RPMS yourself,
though usually I don't see the instructions for this
(extract the .spec file, copy the the tar.gz or
whatever to /usr/src/redhat/SOURCES, run
"rpm -ba xxx.spec", realize it's looking for
a different compressed name than you have sitting
in SOURCES, retar/gzip it to the right name,
run it again, do an "rpm -Uvh /usr/src/redhat/RPMS/i386/xxx.rpm"

ffmpeg for one hasn't had a stable release for some
6 months now, but their CVS tree is perfectly fine
(outside of ffserver).
