It takes a -n option to say how many frames to capture.

I also had the issue with the sound playing - mp1e adjusts the
"line" volume control but for my sound card that is not the right control
for record level.  I use "-r6,0" to mute that control, and set the record
level separately.

Here's the overall command I use:

mp1e -s352x288 -a 2 -b 2500 -B 128 -p /dev/dspX -c /dev/videoX \
  -S 32 -r 6,0 $*

I use 352x288 at 2.5Mb/s generally.  I use TV out for my video and that
gives a good quality picture.  At 720x576 you'll need 4-6Mb of video.

At 352x288 I find mp1e using around 10% only of my Athlon 1.13GHz CPU.
